SAUSAGE QUICHE

2 lb. sausage
8 oz. sliced mushrooms, drained
2/3 cup onion, chopped fine
2/3 cup green pepper, chopped fine
3 cups grated sharp cheddar cheese
2 tablespoons flour (self-rising)
3-9" piecrusts or 2-deep dish piecrusts
4 eggs, beaten
2 cups evaporated milk
2 tablespoons parsley flakes
1 1/2 teaspoons garlic salt
1/2 teaspoon pepper

Preheat oven to 375 degrees. Fry sausage and drain well. Reserve 2 tablespoons fat and saute green peppers and onions. Combine cheese and flour, stir in sausage, mushrooms, green pepper and onion. Spread in pie shell. Mix remaining ingredients and pour into shell. Bake 35-40 minutes until brown and set.
