RICE CASSEROLE

1 stick butter or margarine
1 small onion or can use instant minced onion
1 can beef consomme soup
1 can beef broth bouillon soup
1 (4 oz.) can mushroom pieces and stems
1 1/4 cup Uncle Ben's rice
Slivered almonds (optional)

Melt butter. Cook onion in butter. If using instant minced onion, do not need to cook in butter. Add remaining ingredients and stir. Pour into casserole dish. Cover and put in oven. Bake at 350 degrees for 1 hour. After approximately 45 minutes, remove foil or lid. Stir. Replace cover and cook until fluffy.
