Little Bo Peep's Sheep


2 pkg. shredded coconut
1 qt. vanilla ice cream
1 qt. chocolate ice cream

12 white construction-paper ears
12 brown construction-paper ears
12 cupcake liners

  1. Toast 1 pkg. of coconut on baking sheet in a 400 degree oven for 10 min., or until golden brown; stir a few times while baking.
  2. Spread toasted coconut in pie plate. Place other package of coconut in another pie plate.
  3. Use two thirds of qt. of vanilla to make 6 scoops with regular ice cream scoop. Place scoops on tray cover with waxed paper and return to freezer.
  4. Repeat process with chocolate ice cream.
  5. Remove tray of vanilla ice cream balls and roll in untoasted coconut. Place each scoop in middle of a cupcake liner. Make 6 small scoops of vanilla ice cream with unused ice cream and press firmly in top of each big scoop. Insert white paper ears on each side of head, tilting downward like lamb's ears. Return to freezer.
  6. Repeat above process with chocolate ice cream, rolling in toasted coconut and inserting brown paper ears.
  7. Use licorice, M&M's , etc. to decorate face resembling picture below.
