CHRISTMAS RECIPES

CHRISTMAS TREES

Melt 3 T. butter with 3 cups miniature marshmallows in a heavy saucepan. Stir.
Remove from heat and add 1/2 teaspoon vanilla and 1/2 teaspoon green food coloring.
Fold in 4 cups Cheerios. Cool.
Butter hands.
Shape 2/3 cup of mixture in a tree. Put on waxed paper.

Add gumdrop slices for ornaments and a star on a toothpick for the top.




SNOWBALLS

6 oz. softened cream cheese
5 cups powdered sugar
1/2 teaspoon vanilla
1 bag of coconut flakes

Measure the sugar into the bowl and add the cream cheese. Stir the mixture. Add the vanilla and mix. Roll a teaspoon amount of mixture into balls. Spread the coconut onto a cookie sheet and roll the balls in it. Refrigerate before serving.




ROCKY ROAD CANDY

1- 12 oz. package semisweet chocolate chips
1- 14 oz. can sweetened condensed milk
2 tablespoons margarine
2 cups nuts
1- 10 1/2 oz. bag miniature marshmallows

Place chocolate chips, sweetened condensed milk and margarine in top of a double boiler. Cook over medium heat until chocolate and margarine are melted. Stir constantly. Remove from heat and stir in nuts and marshmallows. Line a cookie sheet with waxed paper. Drop spoonfuls of candy on top. Refrigerate several hours.




HOLLY WREATHS

Heat oven to 350 degrees. Prepare a white or yellow layer cake mix according to package directions. Spread batter in greased and floured jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Bake 25-30 minutes until wooden pick inserted in center comes out clean. Cool in pan.

With a large biscuit cutter or doughnut cutter, cut wreaths out of cake.

Using a prepared white frosting or homemade one, tint green with food coloring. Frost wreaths and decorate with cinnamon candies.




SANTA'S SLEDS

Preheat oven to 350 degrees. Prepare a white or yellow layer cake mix according to package directions. Pour batter into two greased loaf pans, 9 x 5 x 3 inches. Bake 45-55 minutes. Cool. Remove from pans and cut into 1 1/2 inch slices. Trim rounded tops to make rectangles.

Using a prepared or homemade white frosting, frost top and sides of cake slices. Sprinkle with shredded coconut. Place each slice on top of two J-shaped candy canes, so that the canes make "runners" for each "sled". If desired, decorate tops with candied cherries or holiday candies. Makes 12 "sleds".




CANDLE CUPCAKES

Make cupcakes from favorite recipe and frost, using white frosting. Set a small red candle in center of each and decorate with "holly" (use red cinnamon candies or cut berries from candied cherries; cut leaves from green candied cherries).




MERRY CHRISTMAS CUPCAKES

Make cupcakes from favorite recipe and frost, using white frosting. Decorate top of each cupcake with one letter made from red cinnamon candies. Arrange cupcakes on large serving platter to spell out "Merry Christmas".




CHRISTMAS MICE

Needed: Maraschino cherries with stems
hershey kisses
sliced almonds
almond bark, chocolate

Melt the almond bark according to directions. Dip maraschino cherry (be sure to remove most wetness) by stem into chocolate. Adhere hershey kiss onto cherry opposite the stem (this becomes the mouse's head-stem becomes tail). Between the hershey kiss and cherry, stick two sliced almonds in to represent ears. Display together (they look like a little mouse army) with the poem 'Twas the Night Before Christmas... Very very adorable. You can also use small tube of gel icing to add little eyes on the mouse's head. The response from people who see these is incredible!
